  • 4 pieces chicken breasts Use boneless, skinless chicken breasts.
  • 1 cup Brie cheese, cut into small pieces Alternatively, use Camembert.
  • 1 cup apples, diced Honeycrisp apples work well for sweetness.
  • Salt and pepper to taste Don't skip on salting the chicken.
  • 1 tablespoon olive oil For searing the chicken.
  • 1 teaspoon garlic, minced Adds flavor to the filling.
  • 1 teaspoon fresh thyme Optional but highly recommended!

Preparation

  • Preheat the oven to 375°F (190°C).
  • Wash and pat dry the chicken breasts.
  • Cut a pocket in each chicken breast, just deep enough to hold the filling.
  • In a bowl, combine the diced apples, Brie cheese, minced garlic, thyme, salt, and pepper. Mix well.
  • Stuff each chicken breast with the apple and Brie mixture.
  • Heat olive oil in a skillet over medium heat and sear the stuffed chicken breasts for about 3-4 minutes on each side until golden.
  • Transfer the chicken to a baking dish and bake for 25-30 minutes or until cooked through.
  • Let the chicken rest for about 5 minutes before serving.
  • Slice into the chicken and serve hot.

Notes

For best results, use a meat thermometer to ensure the chicken reaches 165°F (75°C). You can make the dish ahead and store in the fridge before baking.
