Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Using a sharp knife, slice each chicken breast horizontally to create a pocket. Don’t cut all the way through; think of it as opening a book.
  • Place apple slices and Brie inside the pocket, then fold the chicken back over.
  • Season both sides of the chicken with salt, pepper, and thyme.

Cooking

  • Heat olive oil in a skillet over medium-high heat and sear chicken for 1-2 minutes on each side until golden brown.
  • Transfer seared chicken to the lined baking sheet.
  • In a small bowl, whisk together maple syrup, creamy Dijon mustard, and whole grain Dijon mustard. Coat the tops of the chicken.
  • Bake for 20-25 minutes until chicken is cooked through.

Notes

Let the chicken rest for a few minutes after pulling it from the oven for juiciness. Adjust glaze sweetness to your preference. Leftovers can be stored for 3-4 days in an airtight container.
