  • 4-6 cloves Garlic, minced Adjust per garlic preference.
  • 2 tablespoons Dried Oregano Fresh oregano can be used as a substitute.
  • 1 teaspoon Salt Sea salt recommended.
  • 1/2 teaspoon Black Pepper Use freshly cracked for best flavor.
  • 1/2 cup Vegetable or Chicken Broth Add depth and assists in crispiness.

Preparation

  • Wash and scrub the potatoes under cold running water. Cut them into consistent 1-1.5 inch wedges or chunks.
  • Soak the cut potatoes in cold water for 30-60 minutes. Drain and pat dry thoroughly.
  • Preheat your oven to 400°F (200°C).

Marinade and Roasting

  • In a large bowl, whisk together lemon juice, olive oil, minced garlic, oregano, salt, and pepper. Toss in the dried potato pieces to coat evenly.
  • Spread the marinated potatoes in a single layer on a baking sheet. Roast for 20-25 minutes.
  • Flip the potatoes and add broth around them; roast for an additional 25-35 minutes, flipping every 10-15 minutes.

Finishing Touch

  • The total roasting time should be around 50-60 minutes or until golden brown and tender. Optionally, crank to 425°F (220°C) for the last 10-15 minutes for extra crispiness.
  • Let the potatoes rest in the pan for about 5-10 minutes before serving. Garnish with fresh herbs, if desired.

Notes

Make sure to soak the potatoes thoroughly to achieve maximum crispiness. Use a large roasting pan to ensure no overcrowding, and do not skip the drying step for best results. Leftovers can be reheated in the oven for restored crispiness.
