  • 200 g feta cheese Use high-quality Greek feta.
  • 1 cup cherry tomatoes Sweet and juicy; slice in half for more roasting.
  • 2 cups fresh spinach Can substitute with kale or broccoli.
  • 2 tablespoons olive oil Drizzle over the dish for flavor.
  • to taste salt and pepper Essential for enhancing flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a baking dish, combine cherry tomatoes and fresh spinach.
  • Drizzle olive oil over the tomatoes and spinach. Season with salt and pepper.
  • Crumble feta cheese evenly over the veggies.
  • Carefully crack the eggs on top of the feta and veggies.
  • Season with additional salt and pepper to taste.
  • Bake in the preheated oven for about 15-20 minutes or until the eggs are set to your liking.
  • Garnish with fresh herbs if desired and serve hot.

Notes
