For the Mochi Dough

  • 1 cup Glutinous Rice Flour Essential for the chewy texture.
  • 2 tablespoons Cornstarch Prevents sticking.
  • 1/4 cup Granulated Sugar Adjust according to taste.
  • 1 cup Milk Can substitute with non-dairy milk.
  • 1 tablespoon Oil or Melted Butter Use olive oil or coconut oil.
  • 2 medium Ripe Bananas The riper, the better for flavor.
  • 1 cup Coconut Flakes For coating, toasting recommended.

Preparation

  • Gather all your ingredients and ensure everything is ready.
  • In a large bowl, whisk together the glutinous rice flour, cornstarch, and granulated sugar.
  • Slowly pour in the milk and oil (or melted butter), then stir until you have a smooth, thick batter.
  • In a separate bowl, mash the ripe bananas until smooth.
  • Fold the mashed bananas into the batter.
  • Prepare a steamer and bring the water to a gentle boil.
  • Grease the steamer basket and pour the batter in, smoothing out the top.
  • Cover with a lid and steam for about 25-30 minutes.
  • Allow to cool slightly, then refrigerate for another hour for easier slicing.
  • Cut into bite-sized squares and roll in coconut flakes to coat.
  • Serve and enjoy your Banana Mochi Bliss!

Notes

For best results, use ripe bananas and don't over-steam. Store leftovers in an airtight container. Reheat in the microwave for 10-15 seconds.
