Preparation

  • Preheat your oven to 375°F (190°C).
  • Heat olive oil in a large oven-safe skillet over medium heat.
  • Season the chicken breasts generously with salt and pepper and sear until golden brown on both sides, about 4-5 minutes per side.
  • Add minced garlic to the skillet after flipping the chicken.
  • Sprinkle in the blueberries and thyme leaves over the chicken.
  • Pour in the chicken broth and drizzle lemon juice, then spoon the blueberry mixture over the chicken.
  • Transfer the skillet to the oven and bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  • Remove the skillet from the oven and let it cool for a few minutes before serving, garnished with additional thyme.

Notes

Watch cooking temperature closely to ensure chicken remains juicy. Leftovers can be refrigerated for up to three days.
