Preparation

  • In a large pot, heat olive oil over medium heat. Add garlic and onion, sautéing until the onions are translucent.
  • Add the diced chicken and cook until browned.
  • Stir in ginger and carrots, cooking for an additional 3 minutes.
  • Pour in the chicken broth and bring to a simmer.
  • Add bok choy and soy sauce, cooking until bok choy is tender, about 5 minutes.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with green onions.

Notes

Store leftovers in an airtight container for up to three days. Reheat gently on the stove for optimal flavor. For meal prep, keep bok choy separate until reheating.
