Instructions
 

Preparation

  • In a bowl, mix pineapple juice, orange juice, apple cider vinegar, and adobo sauce to create the marinade.
  • Add chili powder, smoked paprika, cumin, garlic, salt, and pepper to the marinade, and whisk until well combined.
  • Toss the chicken thighs in the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or overnight for best results.

Cooking

  • Preheat the grill over medium-high heat.
  • Remove chicken from marinade and grill for 5-7 minutes on each side until fully cooked.
  • While the chicken cooks, grill the pineapple chunks for 2-3 minutes on each side until caramelized.

Serving

  • Let the chicken rest for a few minutes before slicing into strips.
  • Serve in tacos or wraps, topped with grilled pineapple and desired fixings.

Notes

Marinate the chicken for as long as possible for best flavor. Use fresh ingredients whenever possible.
