For the Sandwich

  • 2 pieces boneless skinless chicken breasts Season generously with salt and pepper.
  • 1 tablespoon olive oil For cooking the chicken.
  • 1 avocado, sliced Adds creaminess.
  • 4 slices favorite cheese (Swiss, cheddar, or provolone) Cheese adds melty goodness.
  • 4 slices bread (sourdough or ciabatta recommended) Choose sturdy bread.
  • 2 tablespoons mayonnaise For spreading on bread.
  • 1 tablespoon Dijon mustard Adds tangy flavor.
  • 1 small red onion, thinly sliced For crunch.
  • 1 piece tomato, sliced Fresh topping.
  • To taste Salt and pepper For seasoning the chicken.
  • To taste Butter or olive oil For grilling the sandwiches.

Instructions
 

Preparation

  • Season the chicken breasts with salt and pepper on both sides.
  • Heat olive oil in a skillet over medium-high heat.
  • Cook the chicken for about 6-7 minutes on each side until no longer pink; allow it to rest before slicing.

Assembly

  • Slice the cooked chicken thinly.
  • Slice the avocado and prepare the cheese.
  • Spread mayonnaise and Dijon mustard on each slice of bread.
  • Layer chicken, avocado, cheese, onion, and tomato on two slices of bread.
  • Top with the other bread slices, mayo side down.

Cooking

  • Heat the skillet over medium heat and add butter or olive oil.
  • Grill the sandwiches until the bread is golden brown, about 3-4 minutes on each side, pressing down gently.
  • Remove from skillet, let cool briefly, then slice in half and serve.

Notes

Experiment with different types of cheese or add greens like arugula. Leftovers can be stored and reheated on a skillet.
