Ingredients
  

For the Sandwich

  • 2 slices Bread Sourdough or whole grain preferred
  • 1 cup Cooked Chicken Breast Use leftover or rotisserie chicken
  • 1 large Ripe Avocado Make sure it's ripe for spreading
  • 2 tbsp Mayonnaise Optional flavored mayo or Greek yogurt as a swap
  • 1 cup Cheddar or Mozzarella Cheese Cheddar preferred for a classic feel
  • 1 tbsp Butter or Olive Oil For grilling
  • to taste Salt and Pepper Essential for seasoning

Instructions
 

Preparation

  • In a bowl, mash the ripe avocado and mix it with mayonnaise, adding salt and pepper to taste.
  • Spread the avocado mixture on one slice of bread.
  • Layer on the cooked chicken and top with cheese.
  • Place another slice of bread on top.
  • Butter the outside of the sandwich.

Cooking

  • Heat a skillet over medium heat and grill the sandwich until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.
  • Once grilled to perfection, slice and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat on low heat in a skillet for best results. Fresh ingredients greatly improve flavor and texture.
