Instructions
 

Preparation

  • Heat a large skillet over medium heat and add olive oil, allowing it to shimmer.
  • Pat chicken breasts dry and season with salt and pepper. Sear in the skillet until golden brown, about 4-5 minutes per side.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add sliced onion and sauté until soft, about 5 minutes.
  • Add apple slices and sauté for an additional 2-3 minutes.
  • Pour in the apple cider and bring to a gentle simmer.
  • Return the chicken to the skillet, cover, and cook for 20 minutes until the chicken reaches an internal temperature of 165°F.
  • Serve the chicken warm with sauce and garnish with fresh thyme.

Notes

Great with rice or crusty bread for soaking up the sauce. Can be meal-prepped and stored for later.
