Instructions
 

Marinate the Chicken

  • In a large bowl, whisk together lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and pepper.
  • Toss in the chicken thighs, ensuring they are well coated in the marinade. Marinate for at least 30 minutes, preferably overnight.

Cook the Chicken

  • Heat a grill or skillet over medium-high heat.
  • Add the chicken thighs, cooking for 5–7 minutes on each side until cooked through and golden brown.

Rest and Slice

  • Remove the chicken from heat and allow it to rest for 5 minutes before slicing into thin strips.

Warm the Tortillas

  • Warm each tortilla in a dry skillet over low heat for 20–30 seconds on each side until soft.

Assemble Tacos

  • Layer sliced chicken into each warm tortilla, topping with chopped onion, cilantro, and a squeeze of lime juice.
  • Add any desired toppings such as avocado, cotija cheese, or salsa verde.

Notes

Marinate chicken overnight for the best flavor. Don’t skip the resting step to keep the chicken juicy. Warm tortillas just until soft to avoid cracking.
