Ingredients

For the Sauce

  • 2 tablespoons vegetable oil For sautéing onions.
  • 3 cloves garlic, minced Flavor powerhouse.
  • 1 inch ginger, grated Adds warmth and spice.
  • 1 can (14 oz) diced tomatoes Base for creamy sauce.
  • 1 cup heavy cream For a luxurious sauce.

Instructions
 

Marinade the Chicken

  • In a bowl, combine yogurt, lemon juice, ground cumin, ground coriander, garam masala, turmeric, chili powder, and salt.
  • Add chicken pieces to the marinade and coat well. Cover and refrigerate for at least 1 hour, preferably overnight.

Sauté the Aromatics

  • Heat vegetable oil in a large pan over medium heat.
  • Add chopped onions and sauté until golden brown, about 5-7 minutes.
  • Stir in minced garlic and grated ginger, cooking for an additional minute.

Cook the Chicken

  • Add marinated chicken to the pan, reserving the marinade. Cook until browned, about 5-6 minutes.

Add Tomatoes and Simmer

  • Pour in the diced tomatoes and reserved marinade. Stir to combine and bring to a gentle simmer.
  • Cook on low heat for 10-15 minutes.

Cream it Up

  • Lower the heat and stir in heavy cream until well combined. Adjust salt if necessary.

Serve Finishing Touches

  • Serve hot, garnished with fresh cilantro, and enjoy with rice or naan.

Notes

Use fresh spices for the best flavor, control the heat by adjusting chili powder, and consider using a mix of yogurt and cream for a lighter option.
