  • ½ tsp Salt To taste; essential for flavor.
  • 1 tbsp Olive Oil (optional) To adjust creaminess if needed.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) if roasting garlic.
  • Wrap garlic cloves in foil with a drizzle of olive oil, and roast for 30 minutes until soft.

Blending Ingredients

  • In a blender, combine sour cream, mayonnaise, roasted garlic, chipotle peppers, lime juice, paprika, cumin, and salt.
  • Blend until smooth. Adjust the consistency by adding olive oil if needed.
  • Taste and adjust flavors as necessary.

Storage

  • Transfer to an airtight container and chill in the fridge for at least 1 hour.

Notes

This sauce keeps well in the fridge for about a week. It can be used on tacos, grilled chicken, or as a spread. Adjust the heat by changing the amount of chipotle peppers used.
