  • 1 cup bell pepper, diced (optional) Adds crunch and color.
  • 1.5 cups orzo pasta The star of the show that absorbs flavors well.
  • 4 cups chicken broth Use low-sodium for a healthier option.
  • 1 cup heavy cream Brings richness to the dish.
  • 1 cup Parmesan cheese, grated Freshly grated is best for flavor.
  • Salt & pepper, to taste Essential for enhancing the flavors.

Instructions
 

Cooking Steps

  • Warm 1 tablespoon of olive oil in a large pot over medium heat.
  • Add the 1 lb of diced chicken to the pot, season with Cajun seasoning, salt, and pepper, and cook until golden brown, about 5-7 minutes.
  • Remove the chicken and set aside, leaving the flavorful bits in the pot.
  • In the same pot, sauté the 1 cup diced onions and 2 minced garlic cloves until fragrant, about 2-3 minutes. If using, add the 1 cup diced bell pepper and stir.
  • Add the 1.5 cups of orzo pasta, 4 cups of chicken broth, and 1 cup of heavy cream; bring to a gentle boil while stirring.
  • Reduce the heat to low, cover, and let it simmer for 10-12 minutes, stirring occasionally.
  • Stir in the reserved chicken and 1 cup of grated Parmesan cheese, mixing well until the cheese melts.
  • Serve warm, garnished with chopped fresh parsley if desired.

Notes

Adjust seasoning based on preference and do not skip taste-testing throughout the cooking process. Leftovers can improve in flavor when reheated.
