Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish with nonstick cooking spray.
  • In a medium pan over medium heat, sauté the finely chopped onion until soft and translucent, about 5 minutes.
  • In a large mixing bowl, combine the cottage cheese, sautéed onions, chopped spinach, eggs, garlic powder, salt, and black pepper. Stir in half of the shredded cheddar cheese.
  • Pour the mixture into the greased baking dish and top with the remaining cheddar cheese.

Baking

  • Bake for 30-35 minutes or until the top is golden brown and the center is set.
  • Let it cool slightly before slicing.

Notes

Let ingredients warm up for even baking. Fresh spinach can be substituted with frozen; ensure it's well-drained. Add fresh herbs before serving for extra flavor.
