  • 1 cup shredded cheddar cheese (divided) For mixing in and topping.
  • 1 small onion (finely chopped) Adds sweetness and depth.
  • 1 teaspoon garlic powder Enhances flavor.
  • ½ teaspoon salt Balances the flavors.
  • ½ teaspoon black pepper Adds a bit of spice.
  • 1 spray nonstick cooking spray To prevent sticking.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease your favorite baking dish with nonstick cooking spray.
  • In a nonstick pan, sauté the finely chopped onion over medium heat until softened, about 5 minutes.
  • In a large mixing bowl, combine the cottage cheese, sautéed onions, chopped spinach, eggs, garlic powder, salt, black pepper, and half of the shredded cheddar cheese. Mix well.
  • Pour the mixture into the greased baking dish and sprinkle the remaining cheddar cheese on top.
  • Bake in the preheated oven for 30-35 minutes until the center is set and the top is golden brown.
  • Allow the quiche to cool slightly before slicing.

Notes

This quiche is easily customizable. Consider adding ingredients like turkey, kale, or different cheeses based on preference.
