  • 1/4 teaspoon salt Enhances flavor.
  • 1 tablespoon olive oil Extra virgin adds fruity notes.
  • 1 large egg Binds the ingredients.
  • as needed water Add slowly to avoid a sticky dough.

Preparation

  • In a large mixing bowl, combine the cottage cheese, flour, baking powder, and salt.
  • Drizzle in the olive oil and add the egg, mixing until a dough forms.
  • If the dough is dry, splash in a little water at a time until it comes together.

Cooking

  • Flour your working surface and knead the dough for about 5-7 minutes until smooth.
  • Roll out the dough to your desired thickness.
  • Preheat a non-stick skillet over medium heat and cook each flatbread for 2-3 minutes on each side until golden brown.
  • Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a toaster or skillet. Can be made ahead and frozen.
