  • Gather all your ingredients.
  • Shred the cabbage and carrots using a box grater or food processor.
  • Chop the red bell pepper into bite-sized pieces and slice the green onions thin.
  • In a large mixing bowl, combine shredded cabbage, shredded carrots, chopped red bell pepper, and sliced green onions.
  • Toss in a generous handful of Fritos and gently mix.
  • Drizzle with chipotle dressing and season with salt and pepper.
  • Mix everything well and chill for 20-30 minutes before serving or serve it right away.

Notes
