For the Mashed Potatoes

  • 2 pounds Yukon Gold Potatoes Preferred for their buttery taste.
  • 4 tablespoons Butter For mashing.
  • 1/2 cup Milk Adjust for desired creaminess.

For the Honey Glazed Carrots

  • 1 pound Fresh Carrots Sliced for cooking.
  • 2 tablespoons Honey For glazing the carrots.
  • Butter or Olive Oil to taste Olive Oil For sautéing the carrots.
  • Salt to taste Salt Essential for flavor.

Instructions
 

Preparation

  • Wash and pat dry the chicken thighs. Season generously with salt, pepper, thyme, and rosemary.
  • Heat a large skillet over medium-high heat and add a drizzle of olive oil.

Cooking the Chicken

  • Place chicken thighs skin-side down in the skillet and cook for 5-7 minutes until golden brown.
  • Flip chicken, add minced garlic, and pour in heavy cream; let simmer for 10-15 minutes until chicken is cooked through.

Preparing the Mashed Potatoes

  • Peel and chop potatoes into chunks; place in a pot of salted water.
  • Bring to a boil and cook until fork-tender, about 15 minutes.
  • Drain and mash with butter and milk until creamy.

Cooking the Carrots

  • In a separate pot, sauté sliced carrots with butter or olive oil, add honey and salt; cook for 10-12 minutes until tender.

Serving

  • Plate the mashed potatoes, place the creamy herb chicken on top, and arrange the honey-glazed carrots alongside.
  • Drizzle any leftover sauce from the pan over the chicken and enjoy!
