Preparation

  • In a large bowl, mix together the mashed potatoes, cheese, green onions, egg, salt, and pepper until well combined.
  • Form the mixture into small balls or patties.
  • Roll each ball in breadcrumbs until fully coated.

Cooking

  • Heat oil in a frying pan over medium heat.
  • Fry the potato bites in batches until golden brown and crispy, about 3-4 minutes per side.
  • Remove and drain on paper towels.
  • Serve warm as an appetizer or snack.

Notes

For best results, let formed potato bites chill in the fridge for about 30 minutes before frying. They can also be frozen; fry them straight from frozen, adding extra cooking time.
