  • ½ tsp garlic powder Essential for chicken dishes.
  • 2 pieces eggs (beaten) The glue for the coating.
  • 1 Tbsp olive oil For the sauce.
  • 1 pieces avocado (cut in half, remove seed, and scoop out flesh) Adds creaminess.
  • ½ cup cilantro Brings a punch of herbaceous flavor.
  • 1 Tbsp adobo sauce Zesty and slightly spicy.
  • 3 Tbsp lime juice Adds vibrancy.
  • 1 Tbsp honey Balances acidity.
  • ½ cup sour cream Creamy finish for the sauce.
  • ¼ tsp black pepper Adds a mild kick.
  • ½ large English cucumber (thinly sliced) Adds refreshing crunch.
  • 1 pieces jalapeño (thinly sliced) Optional for heat.
  • 1 cup cabbage (thinly sliced and chopped) Adds color and crunch.
  • 2 Tbsp apple cider vinegar Brings tanginess to the salad.
  • 2 Tbsp mayonnaise Adds creaminess to the salad.
  • ¼ tsp garlic powder Additional flavor for salad.
  • ¼ tsp red pepper flakes For spice.
  • 4 Tbsp avocado oil For cooking the chicken.
  • 6 Tbsp finely chopped fresh cilantro For sauce.
  • 1 cup lime juice For sauce.
  • ¼ cup honey For sweetness in sauce.
  • ½ tsp salt Enhances flavor.
  • ½ tsp pepper Enhances flavor.
  • ½ tsp chipotle powder For additional spice.
  • ¼ tsp red pepper flakes Additional spice.
  • 2 pieces garlic cloves (grated) For extra flavor.

Instructions
 

Preparation

  • Combine the olive oil, avocado, cilantro, adobo sauce, lime juice, honey, sour cream, and black pepper in a blender. Blend until smooth.
  • In a mixing bowl, combine mayonnaise, apple cider vinegar, honey, garlic powder, and red pepper flakes. Stir well and toss in slices of cucumber, jalapeño, and chopped cabbage.
  • Set up three shallow bowls: combine flour, salt, paprika, onion powder, and garlic powder in the first; beaten eggs in the second; and crushed cornflakes in the third.

Cooking the Chicken

  • Dredge each piece of chicken in the flour mixture, dip in the eggs, then coat in cornflakes.
  • Air-fry at 360°F for 14-16 minutes or bake at 425°F for 15-20 minutes until golden.
  • In a skillet, combine avocado oil, cilantro, lime juice, honey, salt, pepper, chipotle powder, red pepper flakes, and garlic. Cook until thickened.
  • Toss cooked chicken in the sauce.

Assembly

  • Place crispy chicken on toasted bread rolls, top with cucumber salad and drizzled sauce.

Notes

Pounding the chicken ensures even cooking and juiciness. Feel free to experiment with spices in the coating.
