Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts High in protein and low in fat.
  • 1 cup dill pickle juice From a jar of pickles, used for marinating the chicken.
  • 1 cup seasoned breadcrumbs For a crispy coating.
  • 1/2 cup grated Parmesan cheese Adds nuttiness to the flavor.
  • 1/2 cup all-purpose flour For dredging the chicken.
  • 2 large eggs Whisked, used for coating.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika

Preparation

  • Marinate chicken breasts in dill pickle juice for 30 minutes to 2 hours.
  • Set up your dredging stations: mix flour with garlic powder, onion powder, paprika, salt, and pepper in one dish, whisk eggs in another, and combine seasoned breadcrumbs with Parmesan cheese in a third.
  • Pat dry the chicken, dredge each breast in the seasoned flour, dip in egg, then coat with breadcrumbs.

Cooking

  • Heat about half an inch of cooking oil in a large skillet over medium-high heat.
  • Fry chicken for about 5–7 minutes on each side until golden brown and cooked through.
  • Transfer chicken to a wire rack to drain excess oil and let it rest for a few minutes.
  • Drizzle leftover dill pickle juice from the marinade over the chicken before serving.

Notes

For best results, marinate longer and ensure the oil temperature is just right. Let chicken rest before cutting.
