  • 1 teaspoon turmeric Adds beautiful color and flavor.
  • 1/2 teaspoon cumin Enhances the flavor profile.
  • 1/2 teaspoon salt Always taste as you go.
  • 2 tablespoons olive oil or butter Olive oil is lighter; butter adds a homey feel.
  • 1 medium onion, finely chopped Foundation of flavor.
  • 2 cloves garlic, minced Aromatic essential.
  • 1 cup peas or mixed vegetables Use seasonal vegetables for variety.
  • to garnish fresh cilantro Elevates flavor and presentation.

Instructions
 

Preparation

  • Rinse the basmati rice under cold water until the water runs clear.
  • In a good-sized pot, heat the olive oil or butter over medium heat.
  • Add the finely chopped onion and sauté until translucent and fragrant.
  • Add the minced garlic and sauté briefly before adding the spices: curry powder, turmeric, cumin, and salt. Stir for an extra minute.
  • Stir in the rinsed basmati rice and sauté for another 2-3 minutes.
  • Pour in the vegetable broth or water and bring to a boil.
  • Once boiling, reduce the heat to low, cover, and let simmer for about 15-20 minutes.
  • Stir in the peas or mixed vegetables 5 minutes before the rice is done.
  • Remove from heat, cover again, and let it sit for another 5 minutes.
  • Fluff the rice with a fork and garnish with fresh cilantro.

Notes

Rinse the rice well and allow resting time for best results. This dish can be customized with different vegetables or spices.
