  • 8 pieces corn or flour tortillas Flour preferred for chewy texture.
  • 1 cup shredded cheese Use cheddar or a Mexican blend.
  • 1 tablespoon olive oil For sautéing the chicken.
  • to taste salt and pepper Adds crucial flavor.

Optional Toppings

  • 1 medium avocado, sliced
  • 1 cup shredded lettuce
  • 1 medium tomato, diced

Instructions
 

Preparation

  • Heat olive oil in a skillet over medium heat.
  • Add ground chicken, season with salt and pepper, and cook until browned and fully cooked.
  • Stir in diced dill pickles and ranch dressing until well combined.
  • On a parchment-lined baking sheet, create small mounds of shredded cheese and bake at 400°F (200°C) for 5-7 minutes until crispy.
  • Warm tortillas in a skillet or microwave for about 20 seconds.

Assembly

  • Scoop the chicken mixture into a tortilla and top with crispy cheese.
  • Add optional toppings if desired.
