  • 2 cups chicken broth Low-sodium preferred to control saltiness.
  • 1 cup tzatziki sauce Store-bought or homemade.
  • 1 cup cherry tomatoes, halved Adds sweetness and color.
  • 1 cup cucumber, diced English cucumber recommended for crunch.
  • 1 teaspoon lemon juice Brightens the flavor.
  • salt and pepper to taste Essential for flavor.
  • fresh parsley for garnish Adds a nice touch.

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large baking dish, combine the uncooked rice and chicken broth.
  • Layer the shredded chicken evenly over the rice.
  • Pour the tzatziki sauce evenly over the chicken.
  • Add the halved cherry tomatoes and diced cucumber on top.
  • Drizzle with lemon juice and season with salt and pepper.
  • Cover the dish with aluminum foil and bake for 30-35 minutes, or until the rice is cooked and tender.
  • Remove the foil, stir gently, and bake for an additional 5-10 minutes to slightly brown the top.
  • Garnish with fresh parsley before serving.

Notes

For best results, simmer your broth with herbs for enhanced flavor. Allow the dish to cool for a few minutes after baking for the best flavor integration.
