  • 2 cups cooked chicken, shredded Use roasted, grilled, or rotisserie chicken.
  • 1 can cream of chicken soup (10.5 oz) Adds creaminess and richness.
  • 1 cup sour cream For texture and tang.
  • 1 cup milk Use half-and-half for extra creaminess if desired.
  • 1 tsp onion powder Flavor enhancer without chopping onions.
  • 1 tsp garlic powder Adds garlic-y goodness.
  • 1 tsp black pepper Basic seasoning.
  • 1 cup frozen mixed vegetables (optional) Sneaks in extra vitamins.
  • 1 package stuffing mix (6 oz) For the crunchy topping.
  • 1/2 cup butter, melted For golden-brown stuffing.

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, milk, onion powder, garlic powder, black pepper, and mixed vegetables, if using.
  • Spread the chicken mixture evenly in a greased 9x13-inch baking dish.
  • In another bowl, combine the stuffing mix and melted butter, then sprinkle over the chicken mixture.

Cooking

  • Bake for 30-35 minutes until heated through and the topping is golden brown.

Serving

  • Serve warm and enjoy with a side salad or roasted veggies.

Notes

Excellent leftovers; can be stored in an airtight container for 3-4 days. To reheat, microwave or bake at 350°F until warmed through.
