Ingredients
  

For the Kofta

  • 1 lb ground chicken The richness of chicken gives a juicy texture, making it a perfect protein choice for this dish.
  • 1 small onion, finely chopped Onions add moisture and flavor. Go for small ones; the finer the chop, the better it blends!
  • 2 cloves garlic, minced Fresh garlic is key here. No powdered stuff. It packs a punch!
  • 1 tsp ground cumin This spice gives the kofta an earthy, warm flavor – it’s aromatic and oh-so-good.
  • 1 tsp ground coriander Adds a citrusy and slightly sweet flavor that balances out the dish.
  • 1/2 tsp paprika For a hint of sweetness and a vibrant color.
  • 1/4 tsp cayenne pepper Just enough kick for those who like a little heat.
  • to taste salt and pepper Seasoning is everything, so don’t hold back here!
  • 1/4 cup fresh parsley, chopped A fresh herb that adds bright notes and a nice pop of color.

For the Yogurt Sauce

  • 1 cup plain yogurt This will serve as your creamy base for the sauce, providing a tangy contrast.
  • 2 cloves garlic, minced Because you can never have too much garlic!
  • 1 tbsp lemon juice A squeeze of this will brighten the sauce and add a punch of freshness.
  • to taste salt To bring all those flavors together beautifully.

Instructions
 

Preparation

  • In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, cumin, coriander, paprika, cayenne pepper, salt, pepper, and chopped parsley. Mix well, but avoid overworking the mixture.
  • Shape the mixture into oblong kofta shapes, approximately 2-3 inches long. If your hands get sticky, wet them a little to assist with shaping.

Cooking

  • Preheat your grill or skillet over medium heat. Add a splash of oil to prevent sticking, then place the kofta on the grill. Cook for about 10-12 minutes, turning occasionally until golden brown and cooked through.
  • While the kofta is cooking, prepare the creamy garlic yogurt sauce by mixing the yogurt, minced garlic, lemon juice, and a pinch of salt in a bowl.
  • Once the kofta are cooked, drizzle the sauce on top and serve with pita bread, fresh veggies, or rice.

Notes

Ensure your grill or skillet is hot before adding the kofta to prevent sticking. Let the kofta rest for a couple of minutes before serving to keep them juicy.
