  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder

Wet Ingredients

  • 1/2 cup Coconut Oil Melted; can substitute with butter.
  • 1/2 cup Honey or Maple Syrup Reduce liquid if using syrup.
  • 2 large Eggs Using free-range is preferred.
  • 1 teaspoon Vanilla Extract Use good-quality for best flavor.

Optional Mix-Ins

  • Chocolate chips, dried fruit, spices like cinnamon Add as desired for a unique twist.

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • In a large bowl, whisk together the gluten-free flour, baking soda, and baking powder.
  • In another bowl, combine the coconut oil, honey, and eggs, then whisk until smooth.
  • Gradually add the dry mix into the wet mix and fold in any optional mix-ins.
  • Grease your baking dish with coconut oil or butter, or line it with parchment paper.
  • Pour the batter into the prepared dish and spread evenly.

Baking

  • Bake in the preheated oven for 25-30 minutes or until a toothpick comes out clean.
  • Let it cool in the pan for a bit, then transfer it to a wire rack to cool completely.

Serving

  • Slice and serve! Enjoy with optional toppings like whipped coconut cream or fresh berries.

Notes

Store leftovers in an airtight container for 3-4 days. Reheat in the microwave for 10-15 seconds.
