Dressing

Instructions
 

Preparation

  • Peel and julienne the ripe mangoes into matchstick-sized pieces.
  • Thinly slice the red bell pepper.
  • Shred the red cabbage and carrots.

Mixing

  • In a large bowl, combine mangoes, bell pepper, red cabbage, carrots, and chopped cilantro.
  • In a separate small bowl, whisk together lime juice, honey (or agave syrup), salt, and pepper.
  • Pour the dressing over the slaw and toss to combine.

Serving

  • Serve immediately for freshness or let it chill in the refrigerator for about 30 minutes for the flavors to meld.
