French Onion Chicken Orzo Casserole

Ingredients
  

For the Onion Base

  • 2 tablespoons unsalted butter Adds a rich flavor

For the Casserole

  • 1 1/2 cups orzo pasta Cooks quickly and absorbs flavors
  • 2 cups cooked shredded chicken Can use leftover or rotisserie chicken
  • 1/2 teaspoon dried thyme Aromatic herb
  • 1/4 teaspoon black pepper Balances creaminess
  • 2 cups low-sodium chicken broth Provides flavor base
  • 1 cup heavy cream Adds creaminess
  • 1 1/2 cups shredded mozzarella cheese Melts beautifully
  • 1/2 cup grated Parmesan cheese Adds depth
  • 1/2 teaspoon Worcestershire sauce or balsamic glaze Optional for extra flavor

Instructions
 

Caramelize the Onions

  • In a large oven-safe skillet or Dutch oven, melt the butter and olive oil over medium heat. Add the sliced onions, sugar, and salt. Stir occasionally for about 20-25 minutes until golden.
  • During the last 1-2 minutes, add the minced garlic.

Add Orzo and Chicken

  • Stir in the orzo and let it toast lightly for 2 minutes.
  • Add shredded chicken, thyme, black pepper, and Worcestershire sauce if using.

Pour in the Liquids

  • Add the chicken broth and cream. Bring to a simmer, cover, and cook for 8-10 minutes, stirring occasionally.

Add Cheese

  • Once the orzo is tender, stir in 1 cup of mozzarella and Parmesan cheese until melted.

Bake the Casserole

  • Preheat oven to 375°F (190°C). Sprinkle remaining mozzarella on top and bake for 10-15 minutes until bubbly and golden.

Serve

  • Let the casserole rest for 5-10 minutes before serving. Garnish as desired.

Notes

Don't rush the onions; they need time to caramelize properly. Leftover chicken is great for this recipe.
