Preparation

  • Gather all your ingredients: slice the bread, mushrooms, and tomatoes (if using). Open the canned baked beans.
  • Heat a non-stick skillet over medium heat and add olive oil or butter.

Cooking

  • Add sausages to the skillet and brown them for about 7-10 minutes, turning occasionally.
  • If using, toss in the mushrooms and tomatoes alongside the sausages to cook through.
  • Once sausages are golden, add the baked beans and stir to combine. Let everything simmer for a couple of minutes.
  • In a separate pan, add more oil/butter and fry the eggs to your preferred doneness.
  • Toast the bread until golden and crispy.

Assembly

  • On each plate, lay down a piece of toast. Top with sausages, baked beans, and veggies. Finish with a fried egg and herbs if using.
  • Serve immediately and enjoy!

Notes
