Preparation

  • In a medium pot, bring a generous amount of water to a boil. Add the rinsed red lentils and let them simmer on low heat for about 15-20 minutes. Drain any excess water and set aside.
  • Steam or boil the peeled and cubed sweet potatoes until softened—about 10-15 minutes. Drain and mash them.

Cooking

  • In a skillet, heat the olive oil over medium heat, add the chopped onion and minced garlic, and sauté until translucent.
  • In a large bowl, combine the mashed sweet potatoes, cooked lentils, and sautéed onion and garlic. Add cumin, paprika, salt, and pepper, mixing until well combined.
  • Shape the mixture into patties, adding gluten-free breadcrumbs if the mixture feels too wet.
  • In the skillet, add more olive oil and heat it. Cook the patties for about 3-4 minutes on each side until golden brown.
  • Serve warm, garnished with fresh herbs.

Notes

For extra flavor, roast the sweet potatoes and avoid overcooking lentils. Baking option available: bake at 400°F for 25-30 minutes.
