  • 1 packet (2 1/4 teaspoons) active dry yeast Must be active dry yeast for best results.
  • 2 cloves garlic, minced Adds depth and aroma.
  • 1 tablespoon fresh rosemary, chopped Infuses earthiness into the dough.
  • Additional olive oil for drizzling For a crispier crust.
  • Coarse sea salt for topping Adds texture and flavor.

Preparation

  • In a small bowl, dissolve the yeast and sugar in warm water. Let it sit for about 5-10 minutes until frothy.
  • In a large bowl, combine the flour and salt. Make a well in the center and pour in the yeast mixture along with the olive oil.
  • Stir until the dough starts to come together, then knead for about 5-7 minutes until smooth and elastic.
  • Fold in the minced garlic and chopped rosemary until evenly distributed.
  • Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place until doubled in size, about 1 hour.
  • Punch down the dough and divide it into muffin-sized portions, shaping them into balls and placing them in a greased muffin pan.
  • Drizzle olive oil on top and sprinkle with coarse sea salt. Let them rise for an additional 20 minutes.
  • Preheat the oven to 375°F (190°C). Bake muffins for about 20-25 minutes until golden brown.
  • Remove from the oven and let cool slightly before serving.

Notes

These muffins can be stored in an airtight container at room temperature for a couple of days or frozen for longer storage. Reheat in a warm oven for optimal texture.
