  • 2 stalks celery, diced For aromatic base.
  • 3 cloves garlic, minced Essential for flavor.

Preparation

  • In a large pot over medium heat, add a drizzle of olive oil.
  • Toss in the chopped onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  • Add the minced garlic and turmeric, stirring for about a minute until fragrant.
  • Stir in the lentils and vegetable broth, bringing the mixture to a boil.
  • Once boiling, reduce the heat and let simmer for 25-30 minutes until lentils are tender.
  • Stir in the lemon juice and fresh herbs. Season with salt and pepper.
  • Serve warm in bowls, enjoying it as is or with crusty bread.

Notes

Avoid using old lentils as they take longer to cook. Rinse them before use. Adjust consistency by mashing some lentils if needed. Experiment with spices for different flavors.
