Filling Ingredients

  • 2 cups fresh spinach, chopped Fresh spinach is key for flavor and nutrition.
  • 1 cup feta cheese, crumbled Creamy and tangy, essential for the filling.
  • 1/4 cup fresh herbs (dill or parsley), chopped Adds freshness and flavor.
  • Oil or butter for frying Frying in butter creates a golden, crispy exterior.

Instructions
 

Make the Dough

  • Combine flour and salt in a mixing bowl.
  • Gradually add water and olive oil, mixing until a dough forms.
  • Knead the dough for a few minutes until smooth and elastic.
  • Cover the dough with a kitchen towel and let it rest for about 30 minutes.

Prepare the Filling

  • In another bowl, mix together the chopped spinach, crumbled feta, and chopped herbs.

Assemble the Gözleme

  • Divide the rested dough into equal portions.
  • Roll out a dough portion into a thin circle.
  • Place some of the spinach and feta mixture on one half of the circle.
  • Fold the dough over to create a semi-circle and seal the edges tightly.

Cook the Gözleme

  • Heat a skillet over medium heat and add oil or butter.
  • Cook each Gözleme for about 3-4 minutes on each side until golden and crispy.

Serve

  • Serve warm with yogurt or a squeeze of lemon if desired.
