Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine olive oil, fresh lemon juice, minced garlic, and dried oregano.
  • Add the quartered potatoes to the bowl and toss until they are well coated in the lemon sauce.
  • Spread the potatoes out in a single layer on a baking sheet lined with parchment paper.

Cooking

  • Roast in the preheated oven for about 45-50 minutes, stirring occasionally, until golden brown and tender.
