  • 2 cups cooked shredded chicken Use leftover chicken or rotisserie chicken for convenience.
  • 1 can 15 oz white beans A great source of protein and fiber.
  • 1 can 15 oz red beans Adds color and flavor.
  • 1 onion, diced Yellow onions are preferred for sweetness.
  • 2 cloves garlic, minced Essential for flavor.
  • 2 cups chicken broth Use low-sodium broth.
  • 8 oz cream cheese Adds creaminess to the chili.
  • 1 tablespoon Cajun seasoning Adjust according to taste.
  • salt and pepper to taste Essential for flavor.
  • 1 tablespoon olive oil For sautéing the vegetables.

Instructions
 

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add the diced onion, bell pepper, and garlic. Sauté until softened (about 5 minutes).
  • Stir in the shredded chicken, white beans, red beans, Cajun seasoning, and chicken broth.
  • Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Add the cream cheese and stir until melted and blended in.
  • Season with salt and pepper to taste.
  • Serve hot, garnished as desired.

Notes

Store leftovers in an airtight container for up to 5 days. Reheat with a splash of broth to retain creaminess. Can be made ahead and freezes well for up to 3 months.
