  • 1/4 cup honey Use raw honey if possible.
  • 2 pcs limes (juiced) Freshly squeezed for best flavor.
  • 1 tsp chili powder Adds subtle heat and depth.
  • 1/2 tsp cumin Adds an earthy tone.
  • Salt and pepper (to taste) Basic seasoning.

For the rice

  • 1 cup uncooked rice Base of the dish.
  • 1 pcs avocado (diced) Adds creaminess.
  • 1/2 cup cilantro (chopped) For freshness.
  • 1/4 cup sour cream Optional for extra creaminess.

Instructions
 

Preparation

  • In a bowl, whisk together honey, lime juice, chili powder, cumin, salt, and pepper.
  • Coat the chicken breasts in the marinade and let sit for at least 30 minutes.
  • Prepare 1 cup of rice according to package directions. Once fluffy, set aside to cool.

Cooking

  • Heat your grill or skillet over medium heat.
  • Cook the marinated chicken for about 6-7 minutes on each side until browned and cooked through. Let rest before slicing.

Assembly

  • In a large bowl, combine rice, diced avocado, chopped cilantro, and sour cream. Gently fold until well mixed and creamy.
  • On serving plates, spoon a generous scoop of avocado rice, top with sliced honey lime chicken, and drizzle with extra lime juice.

Notes
