For the rice stack

  • 1 cup uncooked rice Long-grain rice preferred.
  • 1 avocado (diced) Provides healthy fats.
  • 1/2 cup cilantro (chopped) Brightens everything.
  • 1/4 cup sour cream Can be swapped with Greek yogurt.

Instructions
 

Preparing the Marinade

  • In a bowl, whisk together honey, lime juice, chili powder, cumin, salt, and pepper.

Marinating the Chicken

  • Gently coat chicken breasts in the marinade and refrigerate for at least 30 minutes.

Cooking the Rice

  • Cook rice according to package directions.

Grilling the Chicken

  • Heat grill or skillet over medium heat and cook marinated chicken for 6-7 minutes on each side.

Resting the Chicken

  • Let the chicken rest for a few minutes before slicing.

Combining Ingredients
