  • 8 oz Feta Cheese Creamy and salty, the star ingredient
  • 2 tbsp Dill Fresh dill for earthy aroma
  • 2 tbsp Mint Use fresh for best flavor
  • 1 tbsp Lemon Zest Use zest of unwaxed lemons

Assembly Ingredients

  • 8 sheets Phyllo Pastry Keep covered with damp cloth while working
  • 4 tbsp Olive Oil Use extra virgin for flavor

Chili Honey

  • 1/2 cup Honey Use high-quality honey
  • 1 tbsp Chili Flakes Adjust to taste for spice level

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, crumble feta cheese and combine with dill, mint, and lemon zest.
  • Lay out a phyllo sheet and brush lightly with olive oil. Repeat with three more sheets, stacking them.
  • Place a spoonful of feta mixture at one end of the phyllo stack, fold in the sides, and roll tightly. Seal with olive oil.

Baking

  • Brush the top of the rolls with more olive oil and place on a baking sheet lined with parchment paper.
  • Bake for 20-25 minutes until golden brown and crispy.

Chili Honey Preparation

  • In a small saucepan over low heat, combine honey and chili flakes. Stir gently until warmed through.

Serving

  • Drizzle chili honey over warm rolls and serve immediately.

Notes

Keep phyllo covered to prevent drying out. Don't skimp on olive oil for a golden, crispy finish.
