  • 8 oz Pasta (penne or fusilli) Any pasta works, just ensure it cooks al dente.
  • 2 ears Fresh corn Cut kernels off the cob.
  • 1 cup Cherry tomatoes Halved and bright is best.
  • 1/2 cup Red onion Finely chopped.
  • 1/2 cup Cilantro Chopped, or substitute with parsley.

Dressing Ingredients

  • 1/4 cup Lime juice Fresh is best for bright flavor.
  • 1/4 cup Olive oil Use extra-virgin for best flavor.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.
  • 1 tsp Sugar Optional for balance.

Instructions
 

Cooking Pasta

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve some pasta water and ensure it's al dente.

Preparing Corn

  • While pasta is cooking, cut kernels off fresh corn cobs over a bowl for convenience.

Mixing Ingredients

  • In a large bowl, combine cooked pasta, sweet corn, cherry tomatoes, red onion, and cilantro.

Making Dressing

  • Whisk together lime juice, olive oil, salt, pepper, and sugar in a separate bowl. Taste and adjust seasoning.

Combining Salad

  • Pour dressing over the salad and toss until well combined. Adjust dressing to preference.

Chilling

  • Chill the salad in the fridge for a while to meld flavors before serving.

Notes

Let the salad marinate for a few hours for best flavor. Serve with iced tea, lemonade, or white wine.
