Ingredients
  

For the Meatballs

  • 1 pound ground beef (or ground turkey) Lean ground beef for richer flavor is preferred.
  • 1/2 cup breadcrumbs Panko for extra crunch or regular breadcrumbs.
  • 1/4 cup green onions, finely chopped Adds fresh flavor and color.
  • 2 cloves garlic, minced Essential for depth of flavor.
  • 1 tablespoon ginger, grated Adds earthy warmth.
  • 1/4 cup soy sauce Provides umami-rich flavor.
  • 1 tablespoon sesame oil Enhances flavor with nutty fragrance.
  • 1 each egg Binding agent for the meatballs.
  • to taste salt and pepper Enhances flavors.
  • 1 tablespoon brown sugar (optional) For added sweetness.

For the Spicy Mayo Dip

  • 1/2 cup mayonnaise Full-fat for the best texture.
  • 1 tablespoon Sriracha Adjust based on spice tolerance.
  • 1 teaspoon lemon juice Adds acidity.
  • 1 teaspoon soy sauce For additional umami.
  • to taste sesame seeds and chopped green onions (optional) For garnish.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, green onions, garlic, ginger, soy sauce, sesame oil, egg, salt, and pepper, and mix until well combined.
  • Form the mixture into small meatballs, about an inch in diameter, and place them on the prepared baking sheet.

Cooking

  • Bake the meatballs for 20-25 minutes or until cooked through and golden brown.
  • While the meatballs are baking, mix together the mayo, Sriracha, lemon juice, and soy sauce in a small bowl.
  • Taste and adjust the Sriracha as needed. Garnish the dip with sesame seeds and chopped green onions if desired.

Serving

  • Serve the meatballs warm alongside the spicy mayo dip.

Notes

To prevent meatballs from drying out, avoid overbaking. Experiment with spice using red pepper flakes or chili powder for an extra kick. Store leftovers in an airtight container in the fridge for up to three days.
