  • 1 cup fresh blueberries Juicy and full of antioxidants.
  • 1 tablespoon lemon zest Use a microplane for fine zest.
  • 2 tablespoons honey (or maple syrup) Natural sweetener; substitute for vegan option.
  • 1/2 cup almond flour Gluten-free, adds nutty flavor.
  • 1 teaspoon vanilla extract Balances flavors.
  • 1 pinch salt Enhances all flavors.

Instructions
 

Preparation

  • Combine the cottage cheese, blueberries, lemon zest, honey, almond flour, vanilla extract, and salt in a mixing bowl.
  • Gently fold the ingredients together with a spatula until just combined, being careful not to crush the blueberries.
  • Chill the mixture in the fridge for 15-20 minutes to firm up.
  • Scoop out portions using a tablespoon and roll them into balls.

Optional Baking

  • Preheat the oven to 325°F (160°C).
  • Place the protein bites on a parchment-lined baking sheet and bake for 8–10 minutes.

Serving

  • Once cooled, drizzle with honey and garnish with extra blueberries if desired.

Notes

Store in an airtight container in the fridge for up to five days, or freeze for up to three months. Thaw overnight in the fridge when ready to eat.
