  • 2 pieces chicken breasts, cubed or sliced thin A great source of protein.
  • 1 lb potato gnocchi Store-bought or homemade.
  • 2 cups baby spinach Wilts perfectly in the sauce.
  • 1 cup cherry tomatoes, halved Adds a delightful burst of flavor.
  • 3 cloves garlic, minced The aromatic backbone of the dish.
  • 1 cup chicken broth Flavor enhancer for the sauce.
  • ½ cup heavy cream Or coconut cream for a dairy-free option.
  • 1 tbsp olive oil To sauté the chicken.
  • 1 pieces lemon, zest and juice Brightens up the dish.
  • Salt and black pepper to taste Salt and black pepper For seasoning.
  • Fresh basil or parsley for garnish Fresh basil or parsley For visual appeal.

Instructions
 

Preparation

  • Slice chicken breasts into bite-sized pieces and season with salt and pepper.
  • Halve cherry tomatoes and zest and juice the lemon.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add chicken and sauté for 5-7 minutes until golden brown and cooked through.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for 30 seconds until fragrant.
  • Add halved cherry tomatoes and sauté for 2 minutes.
  • Pour in chicken broth and bring to a simmer. Lower the heat and stir in heavy cream, then briefly remove from heat to add lemon juice and zest.
  • Stir in gnocchi and cook for 3-4 minutes until tender.
  • Add baby spinach and return the chicken to the skillet. Stir to combine and season to taste.

Serving

  • Serve garnished with fresh basil or parsley.

Notes

Taste and adjust seasonings as needed. Serve with garlic bread or a salad for a complete meal.
