  • 3 cloves garlic, minced Adds aromatic flavor.
  • 1 piece lemon, zest and juice Brightens the dish.
  • 1 cup chicken broth Forms the base of the creamy sauce.
  • ½ cup heavy cream Substitute with coconut cream for dairy-free.
  • 1 tbsp olive oil Used for cooking the chicken.
  • Salt and black pepper to taste Essential seasonings.
  • Fresh basil or parsley for garnish Adds a fresh finishing touch.

Instructions
 

Preparation

  • Slice the chicken into bite-sized pieces and halve the cherry tomatoes.
  • Measure out the chicken broth, cream, lemon juice, and zest to keep everything organized.

Cooking

  • Heat olive oil in a large skillet over medium heat. Cook the seasoned chicken for about 5-7 minutes until golden brown and cooked through, then remove from the skillet.
  • In the same skillet, sauté minced garlic for about 30 seconds, then add the cherry tomatoes and cook for about 2 minutes until softened.
  • Add chicken broth, lemon juice, and cream to the skillet. Remove from heat before adding cream to prevent curdling, then stir until combined.
  • Return the skillet to heat, stir in gnocchi, and cook for 3-4 minutes until tender.
  • Toss in baby spinach just before finishing, add the cooked chicken back into the skillet, and season with salt and pepper.
  • Garnish with fresh basil or parsley and serve.

Notes

Quality ingredients can make a noticeable difference. Don't overcook the gnocchi, and remember to cook with love for the best results.
