Instructions
 

Preparation

  • Slice chicken breasts into bite-sized pieces.
  • Halve cherry tomatoes and prepare gnocchi as per package instructions.

Cooking

  • Heat a large skillet over medium heat and add olive oil.
  • Season the chicken pieces with salt and pepper, then add to the skillet.
  • Cook chicken until golden brown and cooked through, about 5 to 7 minutes. Remove and set aside.
  • In the same skillet, sauté minced garlic for about 30 seconds until fragrant.
  • Add cherry tomatoes and sauté for 2 minutes until softened and juices flow.
  • Pour in chicken broth and simmer to create depth of flavor.
  • Lower heat and stir in heavy cream, lemon zest, and lemon juice cautiously to avoid curdling.
  • Stir in baby spinach just before serving and coat with sauce.
  • Return chicken to the skillet and mix well. Adjust seasoning if needed.
  • Serve in bowls and garnish with fresh basil or parsley.

Notes

Tastes better the next day! Store in an airtight container for 3-4 days in the fridge.
