  • 1 cup rolled oats Rich in fiber and adds chewiness.
  • 1 cup all-purpose flour Can substitute with whole wheat flour.
  • 1/2 cup brown sugar Provides caramel-like sweetness.
  • 1/2 teaspoon baking soda Helps the bars rise slightly.
  • 1/4 teaspoon salt Enhances sweetness.
  • 1/2 cup butter, melted Adds richness and binds the crumble.

Filling Ingredients

  • 1 cup lemon curd The star of the show! Can use store-bought.
  • 1 tablespoon lemon zest Adds vibrant flavor.
  • 1/2 teaspoon vanilla extract Enhances overall flavor.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking dish.
  • In a large bowl, mix together rolled oats, all-purpose flour, brown sugar, baking soda, and salt.
  • Stir in the melted butter until the mixture is crumbly.
  • Press half of the oat mixture into the bottom of the prepared baking dish to form a crust.
  • Spread lemon curd over the pressed crust evenly.
  • Sprinkle the remaining oat mixture on top of the lemon curd and gently press down.

Baking

  • Bake for 25-30 minutes, or until the top is lightly golden.
  • Let the bars cool in the pan before slicing.

Notes

Chill the crumble mixture for 30 minutes before baking for a crunchier texture. Store leftovers in an airtight container in the refrigerator for up to a week.
