  • 1 teaspoon Garlic Powder Fresh minced garlic is an alternative.
  • 1 cup Quinoa or Brown Rice Alternatives include cooked leafy greens for a lighter option.
  • Fresh Herbs Use parsley or cilantro for garnish.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Peel and cube sweet potatoes, then toss them with olive oil, garlic powder, salt, and pepper.
  • Spread sweet potatoes onto a baking sheet lined with parchment paper.
  • Roast sweet potatoes in the oven for about 20 minutes.
  • Meanwhile, mix maple syrup and Dijon mustard in a bowl.
  • Coat chicken breasts with the marinade and let it sit for 20–30 minutes if time permits.

Cooking

  • After baking sweet potatoes for 20 minutes, place the marinated chicken on the same baking sheet.
  • Return to the oven and bake for another 25–30 minutes, or until the chicken is cooked through.
  • While the chicken and potatoes roast, prepare quinoa or rice according to package instructions.
  • Check chicken doneness; it should reach an internal temperature of 165°F (75°C).

Assembly

  • Layer cooked quinoa (or rice) in a bowl.
  • Top with roasted sweet potatoes and chicken, garnished with fresh herbs.
  • Serve hot and enjoy!

Notes

Marinate chicken for better flavor. Adjust sweetness with more maple syrup or honey as desired. Serve with a fresh salad or sparkling drink for balance.
