Ingredients
  

For the Sweet Potatoes

  • 2 medium Sweet Potatoes Naturally sweet and creamy when cooked.
  • 2 tablespoons Olive Oil Can be replaced with avocado or melted coconut oil.
  • 1 teaspoon Garlic Powder Minced fresh garlic can be used for more flavor.

For the Chicken

  • 4 pieces Chicken Breasts Chicken thighs can be used for extra flavor.
  • 3 tablespoons Maple Syrup Can substitute with honey.
  • 2 tablespoons Dijon Mustard Whole grain mustard can be used for texture.

For the Base

  • 1 cup Quinoa or Brown Rice Packed with protein and fiber; cooked leafy greens are an alternative.

For Garnish

  • to taste Fresh Herbs Parsley or cilantro recommended.

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C).
  • Peel and dice sweet potatoes into bite-sized chunks.
  • Toss sweet potatoes in olive oil, garlic powder, salt, and pepper.

Cooking

  • Spread sweet potatoes on a parchment-lined baking sheet and roast for 25–30 minutes, flipping halfway.
  • In a bowl, mix maple syrup and Dijon mustard to create the glaze.
  • In a skillet, heat olive oil and sear chicken breasts for 4-5 minutes on each side until golden brown.
  • Reduce heat and pour glaze over the chicken, cooking until it reaches an internal temperature of 165°F (74°C).
  • Prepare quinoa or brown rice according to package directions.
  • Assemble bowls with a scoop of quinoa or rice, roasted sweet potatoes, glazed chicken, and top with fresh herbs.

Notes

Sear chicken before adding glaze for juiciness. Don't overcrowd the roasting tray for crispy sweet potatoes. Taste as you go for seasoning adjustments.
